Ohhh who doesn’t like a nice brownie with a cup of tea! I made these brownies following a healthy recipe from Joe Wicks Lean in 15 Book. I halved all ingredients because I didn’t want to make too many (his recipe makes 16), so I only made enough for 8 brownies.
- 75 g dark chocolate broken into pieces (70-80% Dark)
- 30 g peanut butter
- 10 g organic honey
- 1 over ripe banana
- 1 scoop (30 g) chocolate protein powder
- 15 ml soya milk
- A drop of vanilla extract
- 2 eggs, yolks separated
Preheat oven to 160 degrees. Line a baking tray with baking paper. Boil water in a kettle. Transfer boiling water to a saucepan and place a bowl over it without water touching the bottom of it. Add your chocolate, peanut butter and honey. Gently melt.
Mash the banana with a fork until it looks like baby food! Or use a food blender but there’s no need as it’s just more washing up. Add the protein powder, soya milk, vanilla extract and egg yolks and mix together.
When the chocolate and peanut butter have melted fully take it off the heat and stir in the banana mixture. It should look like this:
Lastly, whisk the egg whites until stiff and add a third to the chocolate mixture. Add the remaining egg whites to the same mixture but instead fold it into the mixture gently.
Now, you are nearly done. Add the mixture to the baking tray and bake for 12 minutes. Once it’s baked, leave it to cool down for 5 minutes before cutting into pieces.
They are really yummy with a cup of tea. A nice treat when you’re craving something sweeter!
